Lo Scalco Butcher was founded in San Miniato, Tuscany, in 1955.
It’s a family business and it’s strongly anchored to the traditional roots of the Tuscan hinterland; we still produce salted Tuscan ham, sausages, spiced black pudding, liver, and all the other traditional delicacies, in the way our forefathers used to do.
Our production method is strictly artisanal: we only produce little amount of every product and only if we have the right raw material available. Yuo are not gonna find exactly the same products over time, because we are against any kind of standardization!
All our suppliers belong to the territory, we work with small Tuscan farms, we only choose local breeds pigs, such as the heavy Pisan pig, the macchiaiolo and the gray pig, and local cattle from the Apennines and small breeding close to us.
