The Bussu family has been breeding Sardinian sheep for more than 50 years and has always produced Fiore Sardo cheese with raw milk, following traditional production techniques.
The farm, located in the heart of Sardinia, in the enchanting plateau of Campeda, boasts 200 hectares of pastures and natural meadows with an immense variety of fodder essences that can be from 54 to 100 per square meter. This is biodiversity.
The animals, free and happy to graze, benefit from this great floristic variability because each essence brings a wealth of aromatic and healthy molecules unimaginable with animals in the stable fed only with hay and feed. As a matter of fact the animal that eats more herbs of different species will enrich the milk, and therefore the cheese, with polyunsaturated fats (Cla and Omega3) and other antioxidant molecules, with beneficial effects on human health.
The Caseificio Debbene produce mostly Pecorino cheeses, of different seasonings and quality. All of them are organic.
