We are a young and proactive company, passionate about our work and always ready to take a risk throught new projects.
Our core business is the production and trade of truffle and Fava cottòra, a local fava bean. Truffles are harvested entirely at our place, then preserved fresh or manifactured in small jars without any use of aromas or preservatives, in order to offer an excellent product, able to satisfy and lure our customers.
We also arrange guided or personal tours across our 12 hectares of truffle ground along with our truffle dogs: a real unique experience for our curious customers!
The Presidium brings together the small-scale growers in Frattuccia di Guardea and Collicello di Amelia who still cultivate this heirloom broad bean (Vicia faba) for home consumption or to sell to other local residents. Until the 1980s it was also sold in local markets, but it was gradually abandoned, and is now only cultivated by local families. A small bean, also called the mezza fava, or ""half-broad bean,"" it has a short cooking time (hence the name cottòra) and is eaten cooked only during the fall and winter months. The Presidium wants to bring it back to the market.
Production area: Guardea and Amelia Municipalities, Terni Province
Seasonality: The broad bean is picked in the summer, between June and July. The dried beans are available year-round.
