This is the history of the Giacco Company, which began more than 80 years ago, thanks to the construction of the first oil mill by Giuseppe Giacco in an area characterized by olives from Ottobratica, Tonda di Filogaso and Sinopolese cultivar.
The olives are pressed on the same day as they are picked in Ferdinando Giacco’s mill.
Harvesting generally takes place from 1 October to 30 November using mechanical and manual procedures, exclusively on the family’s land.
The milling of the olives is carried out in the company’s oil mill within six hours from the harvest, using a continuous cycle mill with cold extraction, so as to maintain the organoleptic properties of the extracted oil unchanged.
The oil is stored in stainless steel containers in the absence of oxygen and in rooms with a controlled and constant temperature. These precautions make it possible to maintain unaltered the olfactory, health and taste properties of the oil.
Color: Green with golden reflections
Bouquet: fruity Intense, vigorous and persistent with distinct notes of fresh grass, artichoke and ripe apple.
Taste: well balanced with medium tones of bitter and spicy more pronounced. It closes with a hint of field grass and vegetables; harmonic and elegant, delicate in the tones of ripe and dried fruit on a grassy base.
Bitterness and pungency: restrained and balanced, closing with sweet almond.
Use: hot soups, legumes, red meats, grilled vegetables and fish with a strong flavor. But it goes very well raw on everything.
