Our farm is situated at Carpino, in Apulia, in the northern part of Gargano promontory, near both to Varano Lake and the Foresta Umbra natural reserve.
The farm started its activity in 2001, producing extra virgin olive oil from the cultivar Ogliarola Garganica, and is guided by Michele, who states his father was his model and teacher.
Since from the beginning of the Fava di Carpino Presidium in 2002, Michele has been an active promoter, taking part to fairs and public events in order to show this local sample of biodiversity, a broad bean characteristic of Carpino area. His dedication was repayed in 2014, when the Fava di Carpino has been selected through a process of test and comparison as one of the main ingredients in the bean soup to be eaten by the astronaut Samatha Cristoforetti in the International Space Station; the soup was produced by chef Stefano Polato for Argotec company).
Starting from 2012, our farm is an Agritourism and a Didactical Farm, where we organize educational lab for children and adults.
Carpino’s chalky clay soil is perfect for growing broad beans. After the harvest, the broad beans are sun dried in farmyards. Once dry, the beans are threshed by hand: they are removed from their pods using a wooden pitchfork, and then tossed in the air with wooden shovels, letting the afternoon breeze blow away any remaining particles. Small and dimpled, Carpino broad beans are green when harvested but take on a sandy white color with age.
