Today we enter a historic Neapolitan pizzeria, Gorizia, which has been open for over 100 years in the district of Vomero. To show us a traditional Vomero-style pizza we have Salvatore Grasso, who has inherited the business from his father and grandfather before him, all pizzaioli.
For a traditional dough there four essential ingredients: flour, water, yeast and salt. As Salvatore illustrates, these four ingredients can give rise to infinite variations, like the seven musical notes can combine to form so many melodies. But just as important is the topping, which, for the 1916, Salvatore has chosen to tell a century-long story.
Pay close attention to the art of pizza according to Gorizia and leave no detail aside. Even during cooking there are tricks to make a light and digestible pizza at home, even if Gorizia’s may still be 100 times better!
