Ready to get creative behind the bar? Danny Childs is the bar manager at the The Farm and Fisherman tavern in Cherry Hill, New Jersey, and member of the Slow Food Cooks’ Alliance. Here, he tell us the story of nocino, a walnut liqueur, shows you how to make your very own, and how to use it to make a delicious cocktail—the Walnut Old Fashioned.
“So what is nocino? Simply stated, nocino is a liqueur made from unripe green walnuts. We first learn of nocino from the writings of the Roman Empire so this dates back centuries, and the Romans themselves actually learned of it from the Pict tribe of Great Britain. And, today, you can still find descendants of Romans in Italy and elsewhere, who, on St. John’s Day, climb up into walnut trees, and make their own proprietary nocino.”
From this ancient history, Danny proceeds to mix his own homemade Ark of Taste nocino made from the rare American Butternut with fig-leaf-infused bourbon, syrup and bitters to make a modern, Slow twist on a classic recipe: the Old Fashioned.
