The Negros Island Ark of Taste products film episodes will feature 6 Ark of Taste items of the Island.

People, especially the locals, are not aware of the importance of preserving all Negros indigenous food varieties. The aim of this event is therefore to help them realize the value of using what is naturally available in their environment, not only for food security reasons, but also to preserve the existing ecology and fight climate change.

The program will inlcude:

  • December 10: Batuan and Kadios. Batuan is a hard, green fruit used for its acidic and sour taste, that grows wild in the rainforests of Negros. Kadios, also known as the black-eyed pea in English, has small, black beans high in vitamins and minerals and with a rich, nutty flavor.
  • December 12: Criollo Cacao. The Criollo variety is a pure cacao variety with a unique flavor. Today, it is used to make chocolate bars called tablea and in a traditional hot chocolate drink (tsokolate).
  • December 14: Darag Chicken. Darag chicken meat is leaner and more flavourful than its commercial counterparts. Among the recipes prepared with this ingredient we can mention the Tinola (a chicken soup with chili leaves and green papaya) and the Litson Manok (roasted chicken).
  • December 16: Tinigib White Corn. Corn is an important food crop in the Philippines and the white variety is used as a substitute for rice in times of hardship. In the local cookery, it is mainly used for desserts and specialty foods, such as maja blanca, a corn and coconut milk pudding.
  • December 18: Adlai and Marang. Adlai is a local grain similar to quinoa, while marang is a native fruit with a very intense scent and a sweet taste.
