Pizza: a world made of dough, yeast, flour and toppings.
Salvatore De Rinaldi, better known as Sasà, has been living this world since he was a boy, and become a master of the art.
Salvatore explains the importance of balance between the ingredients: water, flour, salt and sourdough – which is very different from Brewer’s yeast! – that go together to make a perfect dough. He shows us the timing, the correct gestures to use to knead and roll by hand, and form a pizza base.
He also shows us the “mastunicola”, an ancestor of the margherita, from before the arrival of the tomato in Europe. The base is topped with lard, giving it crunchiness and aroma!
