Paniscia Novarese is a typical Piedmontese first course, decidedly rustic and tasty. Ideal for the coldest days! The ingredients of Paniscia Novarese are: rice of the Arborio, Carnaroli or Roma variety, borlotti beans, Savoy cabbage, carrot, celery, onion, red wine (possibly from the Novara Hills), lard, pork rind, salam d’la duja, salt and pepper. In every house, of course, the recipe is personalized and often the list of ingredients is reduced, even if the beans, the onion, the wine and the salami cannot be missing.
On 22, 23, 24 October the Slow Food Convivium of Novara, Confcommercio and FIPE have selected 17 restaurants in Novara where you can taste this dish. Fixed price at 25 euro to taste a paniscia and other specialities from Novara.
