There are different versions around Europe, from the Italian to the Swiss and the French. In Germany it was known as the “Spanish Wind”, while in English it was called a kiss. The version we present today is called soplillo, and it comes from Andalusia. But what are we are talking about? An iconic and elegant dessert: meringue.

The soplillos of Láujar de Andarax are the most well-known dessert of this town in the Alpujarras region of Andalusia, southern Spain. As with the majority of the Andalusian gastronomic traditions, this meringue is the result of influences and cultural fusion among Iberian, Roman, Arab and Gitano cultures. Inside, we find almonds, cinnamon and lemon.

No two form of this meringue are ever the same as it’s made exclusively by hand using a pastry bag for the smaller forms and a spoon for the larger ones.
