In these months one of the most affected sectors has certainly been the catering sector, for this very reason we wanted the very first inaugural event in Biella to be held in a freshly opened restaurant which, of course, stood out for its cooking philosophy. Let us tell you about the Cafeteria Restaurant of the Museum of the Territory, set in the splendid San Sebastiano Cloister Picture Frame in the centre of Biella. Mara was very audacious in embarking on a new reality at a very difficult time, entrusting the keys to her reign to Pietro, a young chef with great flair, who has always been linked to our movement and a great researcher of raw materials of the territory and recipes of memory. This union has given life to a bistro with character, a place where we will meet again to toast our Mother Earth and where we will be able to appreciate a low environmental impact menu with seasonal and local ingredients and limited use of meat.
The climate is also saved at the table. How? By using fresh, seasonal, local ingredients from a clean agriculture rich in biodiversity, consuming less meat, but quality. Without wasting food or using plastic.
