Something all cultures of the world have in common are our celebrations linked to the cycle of life: from birth to death.

In lots of countries the dead are celebrated, remembered, and presented with offerings to maintain a connection with the living, to remind them that we love them and have not forgotten them. It’s one of the most intense and beautiful aspects of our civilization. Here we’re honored to present a recipe which is both simple and elaborate—because it requires time and skill to make it well—from the country that has some of the “liveliest” celebrations of the dead anywhere in the world: Mexico.

We’re headed for Calpulalpan in the state of Tlaxcala, where Yara Muñoz Castillo, a traditional cook of the San Felipe Sultepec community shows us how to prepare this ceremonial bread, and what it means.

How It’s Made is a new format for Terra Madre Salone del Gusto 2020. They are accessible for free on this site!
