In the tradition of the Campania region, dinner on Christmas Eve should be a lean affair, consisting of little more than spaghetti with fish. So how can we make our menu a little richer, a little more precious? Our salad has a backup role here, reinforcing our dinner and making it more nutritious, hence the name: Backup salad.

There are a thousand ways to make your backup salad, but the main ingredients that cry out to be included are cauliflower, olives and pickles.

Luigi Russo, member of the Slow Food Cooks’ Alliance and chef at La Lanterna restaurant in Somma Vesuviana, presents his version of a Campania classic with the addition of cod and Neapolitan pappaccella, the local pepper and a Slow Food Presidium. It’s just as good in the post-Christmas period!
