10am – Arrival and presentation of the program for the day and Terra Madre Salone del Gusto 2020.
10.30am – Tour of the dairy and livestock farm in the company of shepherd, cheesemaker and owner Rino Farci.
Introduction to cheese tasting guided by Slow Food trainer Stefano Olla and tasting of the farm’s produce.
12 noon – Demonstration of cheese production with traditional techniques and tour of the ripening rooms.
